Ingredients
- 1 Fresh lobster tail
- 6 fresh shrimp (raw or cooked, doesn’t really matter)
- 1 package of fresh fettuccini pasta
- I jar of decent Alfredo cooking sauce
- Splash of olive oil
- Seasonal vegetables
Method
First, pop the lobster meat out the shell, making sure to remove all the legs and claws and whatnots underneath. Dice up the meat into little bite sized pieces. De-vein and chop the shrimp into bite sized pieces as well.
Add the seafood to a preheated pan with a splash of olive oil. It will cook quickly, so don’t get ahead of yourself and cook it before everything else is ready.
Add the fresh fettuccini pasta to a pot of boiling water. This will also cook quickly (about 3-4 minutes),
When the pasta is almost ready and the lobster are shrimp are looking good, add the jar of alfredo sauce to the seafood, stir it in and let it sit on a very low heat while you drain and plate the pasta.
Serve the lobster and shrimp over the pasta, with a side of seasonal vegetables for a little color.
Actually, at this point I should make a small confession. On the about page of this blog, I said that I’d never once used the microwave in our trailer, but I did steam the vegetables in the microwave. But only because our tiny trailer only has 2 burners, and I needed them both to cook the seafood and boil the pasta and it just didn’t seem worth firing up a whole campfire to cook a lobster for 2 minutes.
Also, the photo here isn’t that great because it was dark, but hopefully you can see the splash of color from the vegetables (beans, carrots and baby squash) in the background. That said, it did taste pretty good and was granted the seal of approval by my lobster-lovin’ wife.
