Ingredients
- 1 Red bell pepper
- 1 Large Onion
- 1 pack of Mission Street Tacos (flour)
- 1 pack of seasoned carne asada
- Cilantro
- Your favorite salsa
Method
We had to use charcoal for this one, instead of wood, due to campground restrictions. No big deal, but sitting around a pile of charcoal waiting for it to be ready isn’t quite the same as watching an open fire burn down. But whateveer – once it’s ready, everything else is pretty much the same.
Anyway… slice the steak into thin strips, then add it to a preheated lightly oiled cast-iron skillet. Stir it around for bit, then add the sliced pepper and onions. Cook until the steak is browned and the onions have started to soften, then remove from the heat.
Once the cooking area is clear, place the street tacos directly on the grill for about 20-30 seconds each side. The meat will stay hot in the cast iron, so don’t worry about it cooling off before the tacos are lightly toasted.
Oh, and if you have a plastic table at your campsite, be sure to put a hot pad or something down under the skillet, unless you want to melt a nice circle into the table. Not saying this happened, but it was close…
Once the tacos are warmed through, remove them from the heat, fill with the cooked meat, season liberally with you favorite salsa and some fresh cut cilantro.
