Open-Faced Breakfast Sandwich

Quick and simple, yet so sophisticated. I think it’s the combination of the hrissa aioli and smoked salmon that makes me feel fancy when I’m eating it.

Method

Heat a small amount of olive oil in a skillet and place the French bread face down in the skillet until nicely browned on one side.

Remove the bread from the heat and set on a plate. Add a slice of hvarti cheese to the grilled bread.

Add a little more oil to the pan if necessary and fry a couple of eggs to your liking.

Remove the eggs and place one on each slice of bread, on top of the cheese. Add some fresh ground black pepper, smoked salmon, avocado and top with a squeeze of hrissa aioli.

Goes great with a Bloody Mary.
