Fish Tacos with Mango Salsa

Light, fresh and delicious fish tacos on fresh flour tortillas. These were absolutely amazing, and the mango salsa just finished them off perfectly.

We purchased the fish from Whole Foods fresh fish counter. They had a “mix” of several different cuts of fish, including tuna, halibut, swordfish and other white fish, already cut up and ready for your skillet. Not only is this extremely convenient, it is also an easy way to generate plenty of different flavors within your tacos.

Ingredients

  • Fresh, mixed fish
  • Onion
  • Yellow bell pepper
  • Cilantro
  • Avocado
  • Mango salsa
  • Flour tortillas
  • Olive oil

Method

Slice the onion and bell pepper and add to a hot oiled skillet. Cook for a couple of minutes, then add the fresh fish and saute until the fish is flaky and cooked through.

Gently warm the tortillas on a grill over the embers.

Serve the fish on the tortillas and garnish with chopped cilantro, sliced avocado and mango salsa.

Probably pair it with a nice white wine or a margarita or something similar.
