Hash Browns with Onion and Bell Pepper

Another vegan take on a classic skillet breakfast. Extremely simple, but very satisfying.

Ingredients

  • Onion, cut into 1″ pieces
  • Bell Pepper, cut into 1″ pieces
  • Bag of frozen hash brown potatoes
  • Vegan sausage
  • Hot sauce, salt, pepper etc.

Method

Add the hash browns, peppers and onions to a hot oiled skillet. Fry until golden brown.

I was actually trying to keep the vegetables separate from the potatoes, but I quickly realized that wasn’t going to work, so I just mixed it all together and made a sort of potato omelet. I also ran out of space in the skillet, which is why I cooked the sausages in a smaller pan. It all worked out though, and was a great start to the day.

Served with instant coffee and a splash of Bailey’s Salted Caramel Irish Cream, because why not?
