Fresh halibut steak, dipped in beaten egg, then covered in a mixture of Panko breadcrumbs, fresh garlic and Parmesan cheese. Fried with olive oil in a hot cast-iron skillet 5 minutes each side.
Near the end of cooking, I added a dozen precooked shrimp into the skillet for a couple of minutes.
Asparagus was placed on the grill, next to the skillet.
I was planning on adding some couscous or something similar to the meal, but the halibut steak was pretty big and we really didn’t need it. Once it was ready, we simply cut the large steak in half, added the shrimp, asparagus and a half a lemon for garnish. Delicious.
This was probably the meal that really endeared me to using the cast iron skillet for cooking.
