Skillet Chicken Tortellini

This simple dish was remarkably tasty and very easy to prepare.

Ingredients

  • Chicken sausage
  • Bell pepper
  • Onion
  • Garlic
  • Olive oil
  • Box of dried cheese tortellini
  • Can or jar of pasta sauce
  • Cheese for melting

Method

Dice the onion and bell pepper and stir fry it  in a hot skillet with a little olive oil. After a minute or so, add the diced chicken sausage and garlic and saute it for a couple more minutes.

Stir in the pasta sauce and let it sit until it starts bubbling. Then add the box of tortellini. You may need to add a 1/2 cup of water (or tomato sauce) if the pasta starts to soak up too much liquid from the sauce.

Simmer for 10 minutes, stirring occasionally to prevent sticking. Once the pasta is almost completely cooked, sprinkle the cheese over the top and let it melt into the dish.
