Steamed Garlic Shrimp and Zucchini

Deliciously light, and very flavorful.

Ingredients

  • Shrimp (uncooked)
  • White Fish (such as halibut or another quality fish)
  • Zucchini
  • Squash
  • Red Bell Pepper
  • Garlic
  • Butter
  • Parsley (or Cilantro)
  • Olive Oil

Method

Melt the butter, stir in the garlic and parsley and set aside. The butter can be melted in a microwave (if you have one) or you can simply place it in a metal pan near the fire for a few moments. You do have an open fire available, don’t you..?

Add the zucchini, squash and bell pepper to a heavy duty square of tine foil. Fold up the sides to prevent the contents from spilling out.

Place the fish on top of the vegetables, and the shrimp on top of the fish. Finally, add a good amount of the garlic butter to the top of the pile and seal up the package. Place the sealed packet on a grill close to the heat for about 15 minutes. The butter will melt into the bottom of the foil and gently steam the vegetables and fish, while smothering everything with garlic and parsley.

Open and enjoy the contents of the packet. Then enjoy not having to wash dishes.

As you can see in the picture, we used a little too much parsley which prevented the butter from fully melting into the fish and vegetables. A quick stir with a fork though, and it still tasted delicious.
